Description
The C Grade Character
C Grade honeycomb is not second-best — it is the most honest expression of what a hive produces when the beekeeper stays out of the way. Naturally textured cells, visible variation, the rustic beauty of a frame that has not been selected for visual uniformity above all else. Every cell is pure. Every drop of honey inside it is raw, unfiltered, and sealed exactly as the bees left it.
For those who know that character is not a flaw.
What Honeycomb Is
Honeycomb is honey in its most unprocessed form — sealed inside the beeswax cells the bees built to preserve it. Nothing has been extracted. Nothing has been filtered. Nothing has been touched since the hive was opened. The wax cells are edible, digestible, and carry their own trace compounds from the floral source. The honey inside is raw, unfiltered, and precisely as the bees left it.
Origin
Sourced from the sun-lit orange orchards of the Australian Central Tablelands, New South Wales — a distinct production region from the Southwest Australian bioactive honey range. Each frame captures the floral character of the orchard season: bright citrus honey, naturally refined, with a golden translucence that no processing could replicate.
Each frame measures 42.5 cm wide × 10.0 cm high. Vacuum-sealed to preserve the cells and aroma. Presented in a gift box stand.
Tasting Notes
Bright, citrus-forward honey with clean natural sweetness and gentle floral notes. The wax cell delivers a subtle, satisfying chew that releases the honey progressively. Silky mouthfeel. A pure, multisensory experience that exists only in raw, unextracted honeycomb.
How to Serve
Eaten directly — by the spoon, or broken from the frame with a knife. Served on a cheese board alongside aged cheddar, brie, walnuts, dried figs, or dates. Paired with warm sourdough or flatbread. Presented as a centrepiece at a tasting table or dinner party. The frame arrives vacuum-sealed; once opened, serve at room temperature to allow the wax to soften slightly before cutting.
Storage
Store at room temperature, 18–24°C, away from direct sunlight. Do not refrigerate. Once opened, keep covered to prevent moisture absorption. Consume within four to six weeks of opening for optimal quality. Crystallisation of the honey within the cells is natural and does not indicate spoilage.
Frequently Asked Questions
Is beeswax safe to eat?
Yes. Beeswax is non-toxic and digestible in small amounts. It passes through the digestive system without being broken down, much like dietary fibre. Most people consume the wax as part of the honeycomb eating experience without any adverse effect.
How do I cut the honeycomb without it collapsing?
Use a warm, dry knife — either warmed briefly under hot water or left briefly near a warm surface. Cut with a single, confident stroke rather than sawing. Allow the frame to sit at room temperature for 10 to 15 minutes before cutting to soften the wax slightly.
What is the difference between A, B, and C Grade honeycomb?
All grades come from the same origin and production season. Grading is based on cell formation, uniformity, and visual presentation — assessed by hand, frame by frame. A Grade: perfectly formed cells, highest visual uniformity, the finest expression of the hive’s craftsmanship. B Grade: vibrant, well-formed cells with natural character — a balanced centrepiece. C Grade: naturally textured with the rustic beauty of real hive production — every bit as pure, with more visible character.
