Description
The 170g Jarrah TA35+ jar is the considered introduction — a format sized for the solo ritual. A month of daily spoons. A single, deliberate addition to the morning.
From the Forest
There is a forest in Western Australia that most of the world has not heard of. The Jarrah tree grows within it — ancient, unhurried, flowering for two months, once every two years. In that brief window, our third-generation beekeepers collect what it produces. What the tree yields when left alone, in a forest that has never been farmed, is something the laboratory can confirm but only the forest can create.
What the Numbers Mean
Every jar of Australian Wildflower Jarrah TA35+ honey is drawn from a batch independently tested by five ISO/IEC 17025-accredited laboratories, including ALS New Zealand — the same facility that rates and certifies Manuka honey for the global market. The results for the current batch (CL515012435) are published and available to download by batch number.
- Total Activity: TA35+ — phenol equivalence 53.8
- Antioxidant Activity: 473 mg AAE/kg (DPPH radical scavenging assay)
- Glycaemic Index: GI 52 — low GI classification (University of Sydney)
- Probiotic Index: 0.91 — positive probiotic benefit (University of New South Wales)
- Antifungal Activity: MIC range 1.5–3.5% w/v (University of Sydney)
- Glyphosate: Below detection threshold (<0.01 mg/kg)
The numbers are not the story. They are the proof of it.
Tasting Notes and Uses
Rich amber in colour. Smooth caramel sweetness with mineral and floral notes. Silky, dense texture — thick, slow-moving, crystallising over two to four years. Pairs beautifully with green apple, aged cheese, walnuts, and dark chocolate. Taken by the spoon first thing in the morning. Swirled into warm water. Used as a basting glaze on roasted root vegetables or slow-cooked lamb.
Origin and Production
Sourced exclusively from Eucalyptus marginata (Jarrah) trees within the Southwest Australia Biodiversity Hotspot — one of only 36 such regions on earth, home to 12,000 wildflower species, 75% of which exist nowhere else. The Western Australian bee population is free of the diseases found in virtually every other bee population on earth. Cold-extracted, unfiltered, unpasteurised. Halal practices observed throughout production.
Why This Honey
Most premium honeys are described. This one is documented. Every batch carries a number traceable to a downloadable Independent Testing Summary, with original signed laboratory reports available on request. This is not standard practice in the honey industry. It is the standard Australian Wildflower has set for itself.
Frequently Asked Questions
What does TA35+ mean?
Total Activity (TA) is a measure of a honey’s antimicrobial potency, expressed as phenol equivalence. A TA35+ rating means the honey has an antimicrobial effect equivalent to a 35% phenol solution. The current Jarrah TA35+ batch tests at a phenol equivalence of 53.8 — one of the highest independently confirmed results in raw honey.
How does Jarrah honey compare to Manuka?
Both are tested using the same phenol equivalence assay by the same accredited laboratories. The data tells the next chapter. Independent testing results for this batch are published and available to download by batch number from the Transparency Hub.
Can I verify the test results before I buy?
Yes. Every batch has a number. Download the Independent Testing Summary from the Transparency Hub at australianwildflower.au, or email info@australianwildflower.au with your batch number to request the original signed laboratory reports.
Storage
Store at room temperature, away from direct sunlight. Do not refrigerate. Natural crystallisation is a sign of purity, not spoilage — Jarrah honey takes two to four years to crystallise. To soften crystallised honey, place the jar in warm water (not boiling). Do not microwave.
