Description
The 300g Dwutta TA35+ is the format for those who have made their decision. For kitchens where Blackbutt honey occupies a permanent position — not a cupboard shelf, but the counter. The largest standard format in the Dwutta range. The same six-week harvest, the same laboratory documentation, more of it.
The Rarest Six Weeks in Honey
Dwutta. The Noongar word for the Coastal Blackbutt tree. From December to February — a window of just six weeks — it flowers in the coastal and near-coastal eucalypt forests of the Southwest Australia Biodiversity Hotspot. Less than 2% of Australian honey production comes from this harvest. From that already-rare yield, Australian Wildflower selects only the finest batches. What remains is this.
What the Numbers Mean
Every jar of Dwutta TA35+ is drawn from a batch independently tested by five ISO/IEC 17025-accredited laboratories, including ALS New Zealand. The results for batch IBC212-35 are published and available to download.
- Total Activity: TA35+ — phenol equivalence 41.5
- Antioxidant Activity: 442 mg AAE/kg (DPPH radical scavenging assay)
- Phenolic Content: ~31.6 ± 9.4 mg GAE/100g (University of Western Australia)
- Glyphosate: Below detection threshold (<0.01 mg/kg)
The forest produced it. The laboratory confirmed it. We published both.
Tasting Notes and Uses
Dark amber in colour. Rich, full-bodied flavour with golden syrup and molasses tones. A bitter-coffee finish that is distinctive and persistent. Thick, syrup-like consistency — crystallising over 12 to 18 months. Pairs with bold, savoury flavours: ginger, garlic, chilli, dark chocolate, blue cheese. Used as a marinade base for slow-cooked meats and charred vegetables. The honey chefs reach for first. Men’s number one bestseller.
Origin and Production
Sourced exclusively from Eucalyptus todtiana (Coastal Blackbutt / Dwutta) flowering within the Southwest Australia Biodiversity Hotspot, Western Australia. Third-generation ethical beekeepers. Cold-extracted, unfiltered, unpasteurised. Halal practices observed throughout production.
Why This Honey
Dwutta TA35+ is one of the rarest honeys in commercial production anywhere on earth. The six-week harvest window, the sub-2% production share, the TA35+ independent confirmation — these are facts, not marketing. The Independent Testing Summary for every batch is available to download. Original signed laboratory reports are available on request within 48 hours.
Frequently Asked Questions
What is Dwutta honey?
Dwutta is the Noongar (indigenous Western Australian) name for the Coastal Blackbutt tree, Eucalyptus todtiana. The honey produced from its nectar is a monofloral varietal harvested in a six-week annual window, representing less than 2% of total Australian honey production. It is botanically and flavour-profile distinct from Jarrah honey, and is independently tested for antimicrobial and antioxidant activity.
Is Blackbutt honey the same as Dwutta honey?
Yes. Blackbutt is the common name; Dwutta is the Noongar name used by Australian Wildflower to reflect the botanical and cultural origin of the honey. The scientific name is Eucalyptus todtiana. Note that Yarri honey also comes from a Blackbutt species (Eucalyptus patens, Forest Blackbutt) — these are botanically distinct trees producing distinct honey profiles.
Why is there no GI or probiotic index listed for Dwutta honey?
These bioactive parameters have not yet been independently established for Eucalyptus todtiana honey at the academic research level. Total Activity, antioxidant activity, phenolic content, and full regulatory compliance testing have been completed. Additional bioactive profiling is ongoing. Results are published as they become available.
Storage
Store at room temperature, away from direct sunlight. Do not refrigerate. Crystallisation is natural — Dwutta honey typically takes 12 to 18 months. To restore liquid consistency, place the jar in warm water. Do not microwave.
